2007 Syrah – Beef and Lamb Burgers with Tamarind-Herb Aioli

Beef and Lamb Burgers with Tamarind-Herb Aioli
serves 4
¾ lb ground beef
¼ lb ground lamb
¾ cup fresh parsley
¼ cup fresh cilantro
1 shallot
1T tamarind (wet) – available in Asian markets
2 tsp garlic salt
½ tsp cinnamon
½ tsp cumin
½ cup mayonnaise
4 buns of choice
1 tomato sliced (if desired)
Mix ground beef and lamb.
In a blender – blend parsley, cilantro, shallot, tamarind, garlic salt, cinnamon, cumin. Add ¾ of herb mixture to meat. Mix together and form into 4 patties.
Add mayo to the remaining herb mixture – refrigerate.
Grill patties on medium high for approx 10 minutes – until done. Grill buns for a couple of minutes- spread with herb mayo.
Top with meat and fresh tomato if desired.
