2012 Gewürztraminer – Roasted Sunchoke, Spinach, and Caramelized Onion Dip

2012 Gewürztraminer The 2012 Gewürztraminer is a dry style Gewürztraminer with aromas of guava, Meyer lemon and a hint of clove. The flavor is fresh and bright, with notes of spicy pineapple and a zesty finish.

Roasted Sunchoke, Spinach, and Caramelized Onion Dip

makes 4 cups

1 (10 ounce) package frozen spinach, defrosted and drained
1 (8 ounce) package cream cheese, softened
1/4 c sour cream
1/2 c Parmesan cheese
2 Tbs minced garlic
1 large onion, chopped
1 pound sunchokes, peeled and diced
2 Tbs olive oil
salt and pepper

Preheat oven to 425. Toss the peeled and diced sunchokes in oil, and sprinkle with salt and pepper. Lay on a baking sheet and get into the heated oven. Let cook for 7-10 minutes, until fork tender, and starting to brown.

In the meantime, heat a saute pan over medium heat. Cook the onions until tender, then turn heat down to medium-low and let cook until caramelized. Add garlic, and saute for 1-2 minutes until fragrant.

In a bowl, mix together the softened cream cheese and sour cream. Add the spinach, sunchokes, and onions and garlic. Stir in the Parmesan cheese and season to taste.

Heat oven to 350. Put the finished dip in an oven proof baking dish, and get in hot oven. Let cook until heated through. Serve with bread, crackers, or veggies. Leftovers will freeze well, and can also be served with pasta or chicken.
